Roasted Red Pepper Pasta Sauce
This sauce highlights the abundance of the Annapolis Valley. Long known as the breadbasket of the Maritime provinces, it embraces coming together around a large table to enjoy the harvest through meals with family and friends. This sauce celebrates the gathering of people brought together by the simple pleasure of delicious local food.
We grow a mix of heirloom variety paste tomatoes so when combined in a sauce it creates a nice balance of sweetness and acidity for a pure tomato taste. We add roasted red peppers and basil to make for a richly flavoured pasta sauce to be enjoyed at anytime of the year.
Enjoy this sauce heated up and served simply over pasta or add a pat of butter to make it even richer. Try adding some chunked and fried italian sausage from your local butcher. The natural sweetness of the tomatoes also lends itself well to be baked over chicken or pork, or as the base for a rich lasagna.

When we moved to the Annapolis Valley the first purchase for our home was a large harvest table. Hand made by a local craftsman in Grand Pre, NS from hand planed pine, it accomodates up to 12 people. We regularly have groups of friends and family over to share meals around this table. Our Harvest Table sauces are named after this table because of the wonderful celebrations of food we've experienced sitting there.

This is the same sauce as the above Roasted Red Pepper Pasta Sauce except we add some cayenne pepper to give it a touch of heat for those that like their pasta sauces a bit spicey.
