Abandoned Orchard - Lightly Smoked Heritage Apple Sauce

This sauce gets its name directly from the source of the apples; an abandoned orchard nearby us in Canning, NS. Growing wild, it still produces apples from old heritage varieties such as Golden Russet, Cortland, Macintosh and Gravenstein. Small batches are roasted and lightly smoked with apple wood to produce a unique flavour that pays tribute to the heritage of the land and days gone by in the Annapolis Valley of Nova Scotia.

Ingredients: apples, water, apple cider vinegar, apple wood smoke

This is not your typical applesauce. In fact we have to call it "apple sauce", with the space in between, and preface that with the fact that it is smoked, because "applesauce" is a standardized product in Canada. Roasting it, and certainly smoking it, does not meet any of those standards. But that's ok, we're not making baby food here. Instead, we're striving for unique and interesting flavours that serious food lovers would enjoy.

We don't make a lot of this sauce compared to our hot sauces, as it's difficult and time consuming to produce. The un-sprayed apples from the abandoned orchard are sometimes buggy, and this means more care and effort during picking to discard apples with signs of insect damage, and again during peeling, coring, and slicing, we find more apples that need to be discarded. But the extra effort is worth it.

Enjoy this sauce along side roast pork or grilled pork chops, or as a spread on bread or crackers with a soft cheese.

Ingredients: apples, water, apple cider vinegar, cayenne peppers, apple wood smoke

This sauce is produced in the same way as our regular Lightly Smoked Heritage Apple Sauce, above, except we add a bit of cayenne pepper to give it a little kick of heat. Again, enjoy this sauce with pork or as a spread or dip with cheese and crackers. Or just a spoon and the jar.
